Patrick D. Duncan, MBA, BSc., Dip in Education

Patrick has 40years of experience working as a product and process development manager in the food industry in Jamaica. He has held prominent roles in the agro-processing industry, including Managing Director of Jam Mar Processing Limited, Director of Grace Food Processors, Project Manager of Jamaica Teas, Soup & Spices, and Manager of CREMO Ltd.

Patrick has obtained an Executive Master of Business Administration (MBA), a Bachelor of Science (BSc) degree in Chemistry & Applied Chemistry, and a Diploma in Education from the University of the West Indies, Mona. He has earned several certificates from the University of Maryland, Better Processing Control School(BPCS), as well as from the Campden BRI course in Food Processing Management in the USA. Additionally, he has completed courses in Safe Quality Food (SQF), Hazard Analysis and Critical Control Point (HACCP), and Quality Management.

Previously, Patrick lectured at the UWI (Mona) and the BPCS. He is also a qualified trainer in Food Safety Systems and is the co-author and editor of internal HACCP and Food Safety Systems Manuals. He is a member of the Jamaica Manufacturers and Exporters Association and the former Treasurer of EDUCOM Co-Op Credit Union (formerly AAMM Co-Op Credit Union and UWI Co-Op Credit Union).

Patrick’s specializations include, but not limited to:

·        Factory start-up incorporating current technologies

·        Inventory control, particularly Just-in-Time systems

·        Accounting and reporting systems using software packages

·        Thermal processing

·        Food sanitation systems and preventative control

Key Achievements:

·        Served as contract manager for the development of a soup and spice processing facility at Jamaican Teas Limited.

·        Part owner and Managing Director of Jam Mar Processing Limited which focuses on portion-controlled packaging of cake mixes, freezer pops, bag drinks, and soups for sale to Jamaican Teas Limited.

·        Led the continued growth of a food manufacturing SME, preparing it for inorganic growth by merging with Triple Hill of the Cayman Islands.

·        Successfully developed management systems at Jam Mar through accounting software, including Peach TREE and MYOB hybrid Acclivity Plus.

·        Created a broad range of soup formulations, reducing reliance on imported premixes and increasing local value through more economical formulations.

·        Developed a market-ready range of freezer pops using herbal additives such as moringa, aloe and lemon grass.

·        Maintained and upgraded packaging equipment beyond their normal working life.

·        Demonstrated expertise in managing small manufacturing spaces.

·        Implemented HACCP and PCQI quality systems.

·        Successfully introduced Tetra Pak packaging technology to Jamaica’s milk and juice markets.

·        Transitioned maintenance crew to function as machine operators.

·        Gained in-depth knowledge of milk processing equipment and systems.

·        Trained over four middle-level managers.

·        Constructed and successfully operated a UHT/ TetraPak plant from the ground up at CREMO Ltd.

·        Implemented computer-based production and inventory monitoring systems at CREMO.

·        Developed a retortable pouch packaging line todo ready-to-eat meals such as curried mutton and stew peas at Grace Food Processors.

·        Renovated the Quality System to Total Quality Management.

·        Rationalized product offerings using the 80/20rule, resulting in a more profitable operation.

·        Negotiated successfully with workers’ unions such as UAWU, NWU, and BITU.

Community Engagement and Mentorship

Beyond his professional work, Patrick is actively involved in education programs in collaboration with the Youth Fields of Hope to inspire and empower the next generation of agro-processors. Patrick serves as a mentor to young researchers, guiding them in their scientific pursuits and encouraging them to contribute to the Caribbean’s development.

Interests

Patrick’s hobbies include reading health lifestyle literature and engaging in community service through his local community center.

Patrick is committed to advancing Youth Fields of Hope’s mission of driving research and innovation for national development, with a focus on sustainability, economic growth, and improving the quality of life for youths across the Caribbean.

His innovative approach to agro-processing has advanced some of Jamaica’s largest manufacturing companies, and he continues to encourage the next generation to pursue healthy lifestyles.
